Chipotle Tomatillo Salsa - 3

Recipe Ingredients

2   Chipotle chiles - dried
1 cup 237mlHot water
6 cups 1422mlTomatillos - husked, washed (medium) sliced, roasted
1   White onion - sliced (medium)
6   Garlic - chopped
1/4 cup 4g / 0.1ozFresh cilantro - chopped
1/4 teaspoon 1.3mlSalt - to taste

Recipe Instructions

Toast chiles in heavy skillet over medium heat until brown and fragrant, about 3 minutes.

Cool slightly, slit open, and remove seeds. Sautee onion and garlic until lightly brown.

In a small bowl toss chiles with the hot water and soak for 10 minutes.

Put all ingredients in a blender. Process at high speed until you have a slightly textured liquid.

Makes approx 2 1/2 cups.
