Chipotle Tomatillo Salsa - 3 Recipe - Cooking Index
2 | Chipotle chiles - dried | |
1 cup | 237ml | Hot water |
6 cups | 1422ml | Tomatillos - husked, washed (medium) sliced, roasted |
1 | White onion - sliced (medium) | |
6 | Garlic - chopped | |
1/4 cup | 4g / 0.1oz | Fresh cilantro - chopped |
1/4 teaspoon | 1.3ml | Salt - to taste |
Toast chiles in heavy skillet over medium heat until brown and fragrant, about 3 minutes.
Cool slightly, slit open, and remove seeds. Sautee onion and garlic until lightly brown.
In a small bowl toss chiles with the hot water and soak for 10 minutes.
Put all ingredients in a blender. Process at high speed until you have a slightly textured liquid.
Makes approx 2 1/2 cups.
