Cajun Red Bean Relish Recipe - Cooking Index
| 3 | Shallots | |
| 1 tablespoon | 15ml | Minced parsley |
| 2 tablespoons | 30ml | Wine vinegar |
| 5 tablespoons | 75ml | Salad oil |
| 2 cups | 320g / 11oz | Red beans - cooked, cold |
| Salt and pepper to taste |
Chop shallots fine, including tops. Add parsley, vinegar, and oil and season to taste.
Pour over beans and pack in jars.
