Black Bean Relish Recipe - Cooking Index
15 oz | 426g | Black beans; canned - * |
3/4 cup | 46g / 1.6oz | Tomato; finely chopped - 1 med |
1 | Serrano chile - ** | |
1/2 cup | 73g / 2.6oz | Red bell pepper - chopped |
1/4 cup | 15g / 0.5oz | Red onion - finely chopped |
2 tablespoons | 30ml | White wine vinegar |
1 tablespoon | 15ml | Vegetable oil |
1/4 teaspoon | 1.3ml | Salt |
* Black beans should be canned and they should be rinsed and drained.
** Serrano chile should be seeded and finely chopped.
Mix all ingredients. Cover and refrigerate until chilled, about 1 hour.
Makes about 2 1/2 cups relish.
