Winter Green Salad With Olives Recipe - Cooking Index
Vinaigrette | ||
1/3 cup | 78ml | Orange juice |
3 tablespoons | 45ml | Lemon juice |
2 tablespoons | 30ml | Olive oil |
1 tablespoon | 15ml | Drained capers - chopped |
1/2 teaspoon | 2.5ml | Dried oregano |
Salad | ||
6 cups | 660g / 23oz | Mixed winter greens |
1/2 cup | 118ml | Pomegranate cells |
3 tablespoons | 45ml | Olives - chopped |
2 tablespoons | 30ml | Pine nuts - toasted |
Vinaigrette: Combine all ingredients in a jar; cover and shake vigorously.
Salad: Toss greens, pomegranate cells, olives and vinaigrette in a large bowl.
Sprinkle with pine nuts.
