2 cups | 320g / 11oz | Wild rice - cooked |
1/2 cup | 55g / 1.9oz | Carrots - chopped |
1/2 cup | 73g / 2.6oz | Pecans - chopped |
1 cup | 146g / 5.1oz | Yellow pepper - chopped (medium) |
1/2 cup | 80g / 2.8oz | Raisins |
Sherry chive vinaigrette | ||
Lettuce cups, if desired | ||
Vinaigrette | ||
1/3 cup | 78ml | Oil |
2 tablespoons | 30ml | Sherry |
1 | Garlic | |
1 tablespoon | 15ml | Parsley - chopped |
1/3 cup | 78ml | Chives - snipped |
1/4 teaspoon | 1.3ml | Black pepper |
Combine all ingredients except lettuce cups.
Cover and refrigerate four hours or overnight.
Serve in lettuce cups if desired.
For the vinaigrette: combine all ingredients in a food processor and blend until minced.
