Recipe Ingredients

12 oz 340gSpam
2 cups 320g / 11ozWild rice - cooked
1/2 cup 55g / 1.9ozCarrots - chopped
1/2 cup 73g / 2.6ozPecans - chopped
1 cup 146g / 5.1ozYellow pepper - chopped (medium)
1/2 cup 80g / 2.8ozRaisins
  Sherry chive vinaigrette
  Lettuce cups, if desired
  Vinaigrette
1/3 cup 78mlOil
2 tablespoons 30mlSherry
1   Garlic
1 tablespoon 15mlParsley - chopped
1/3 cup 78mlChives - snipped
1/4 teaspoon 1.3mlBlack pepper

Recipe Instructions

Combine all ingredients except lettuce cups.

Cover and refrigerate four hours or overnight.

Serve in lettuce cups if desired.

For the vinaigrette: combine all ingredients in a food processor and blend until minced.
