Warm Spiced Chicken Salad With Balsamic Dress Recipe - Cooking Index
3 tablespoons | 45ml | Balsamic vinegar |
1 teaspoon | 5ml | Ground cumin |
1/2 teaspoon | 2.5ml | Ground coriander |
Salt and pepper | ||
1 lb | 454g / 16oz | Chicken breast |
2 tablespoons | 30ml | Oil |
Dressing | ||
2 teaspoons | 10ml | Sesame oil |
3 tablespoons | 45ml | Peanut or vegetable oil |
1/3 cup | 78ml | Scallions - thinly sliced |
3 cups | 711ml | Lettuce |
1/2 cup | 118ml | Radishes - sliced |
To make chicken salad combine cumin, coriander salt and pepper in small bowl. Flatten chicken.
Sprinkle with spices and rub in.
Cook chicken in oil for 6 minutes on each side. Remove.
To make dressing, add vinegar, oils and scallions to skillet drippings and cook for 1 minute.
Spread lettuce on large platter. Slice chicken into 1/2 inch strips and lay on top lettuce.
Scatter radishes over salad. Pour warm dressing over it and serve.
