Walla Walla Onion Potato Salad Recipe - Cooking Index
3 lbs | 1362g / 48oz | Red new potatoes - skinned |
1 lb | 454g / 16oz | Walla Walla - Vidalia or other (large) mild onion |
1 cup | 110g / 3.9oz | Celery - sliced |
1 cup | 146g / 5.1oz | Golden delicious apple - diced (large) |
20 cups | 4740ml | Pimiento stuffed olives - sliced (large) |
1/3 cup | 78ml | Sweet pickle relish |
1 1/2 cups | 355ml | Mayonnaise |
2 teaspoons | 10ml | Dijon mustard |
2 tablespoons | 30ml | White wine vinegar |
2 tablespoons | 30ml | Steak sauce |
Salt and pepper - to taste |
Boil potatoes until just tender when pierced by a fork.
Drain, let cool and dice into a large bowl. Cut onions into quarters and slice thin; add to potatoes along with celery, apples, olives and pickle.
In a small bowl, stir mayonnaise, mustard, vinegar and steak sauce.
Spoon over potato mixture and mix gently. Season with salt and pepper.
Cover and refrigerate for at least 2 hours or until the next day.
