Tomato and Avocado Pinwheel Salad Recipe - Cooking Index
4 | Tomatoes - cut into wedges | |
2 | Avocadoes - peeled and pitted, cut into thin wedges | |
2 tablespoons | 30ml | Lime juice |
Sweet Vinaigrette | ||
1/2 cup | 118ml | Balsamic vinegar |
1 | Garlic clove - minced | |
3 tablespoons | 45ml | Onion - grated |
1 tablespoon | 15ml | Sweetener |
1/4 cup | 59ml | Olive oil |
Sprinkle tomato and avocado wedges with lime juice. On a serving platter, arrange alternated slices of tomato and avocado in a pinwheel fashion.
VINAIGRETTE: Whisk together vinegar, garlic, salt, onion and sweetener. Gradually pour in the oil and whisk to blend. Pour this vinaigrette over the wedges
