Recipe Ingredients

1 lb 454g / 16ozCooked bulgur
1/4 cup 59mlFresh lemon juice
1/2 cup 118mlOlive oil
2   Garlic - finely minced
1/2 cup 46g / 1.6ozFresh mint leaves - minced
1 cup 146g / 5.1ozFresh parsley - chopped
1 cup 146g / 5.1ozScallions - chopped
  Salt
  Black pepper
2   Fresh tomatoes - chopped (medium)
1   Cucumber - peeled, seeded, (small)
  Chopped

Recipe Instructions

Prepare bulgur according to package directions.

Whisk together olive oil and lemon juice. Add garlic, scallions, mint, and parsley. Season with salt and pepper to taste.

Mix dressing with bulgur and chill overnight. Stir in chopped tomatoes and cucumber immediately before serving.
