1 lb | 454g / 16oz | Sweet potatoes - baked |
1/2 cup | 118ml | Green peas - cold cooked |
1/2 cup | 73g / 2.6oz | Pineapple - crushed unsweetened |
3 tablespoons | 45ml | Parsley - chopped fresh |
1/3 cup | 78ml | Favorite dressing |
8 | Lettuce leaves (optional) |
Peel and slice sweet potatoes and place in a small bowl.
Add remaining ingredients; toss lightly. If desired, serve on lettuce leaves.
