Summertime Main-Dish Salad Recipe - Cooking Index
2 1/2 cups | 592ml | Fully cooked low-fat ham - cubed |
1/3 cup | 20g / 0.7oz | Onion - chopped |
2 | Garlic - minced | |
1 teaspoon | 5ml | Dried oregano |
1 teaspoon | 5ml | Dried thyme |
1/4 teaspoon | 1.3ml | Cayenne pepper |
1/4 teaspoon | 1.3ml | Pepper |
1 tablespoon | 15ml | Cooking oil |
1/3 cup | 78ml | Cider or red wine vinegar |
4 cups | 640g / 22oz | Cooked rice |
3 cups | 187g / 6.6oz | Cooked chicken - diced |
2 | Celery - thinly sliced | |
1/2 cup | 118ml | Green bell pepper - julienne |
1/2 cup | 118ml | Sweet red bell pepper - julienne |
2 | Green onions - with tops, sliced | |
1 | Cherry tomatoes |
In a skillet over medium heat, saute the first seven ingredients in oil until vegetables are tender.
Remove from the heat; stir in vinegar.
Cool for 5 minutes.
In a bowl, toss rice, chicken, celery, peppers and onions. Stir in the ham mixture.
Cover and chill for at least 2 hours. Garnish with tomatoes.
