Summertime Main-Dish Salad

Recipe Ingredients

2 1/2 cups 592mlFully cooked low-fat ham - cubed
1/3 cup 20g / 0.7ozOnion - chopped
2   Garlic - minced
1 teaspoon 5mlDried oregano
1 teaspoon 5mlDried thyme
1/4 teaspoon 1.3mlCayenne pepper
1/4 teaspoon 1.3mlPepper
1 tablespoon 15mlCooking oil
1/3 cup 78mlCider or red wine vinegar
4 cups 640g / 22ozCooked rice
3 cups 187g / 6.6ozCooked chicken - diced
2   Celery - thinly sliced
1/2 cup 118mlGreen bell pepper - julienne
1/2 cup 118mlSweet red bell pepper - julienne
2   Green onions - with tops, sliced
1   Cherry tomatoes

Recipe Instructions

In a skillet over medium heat, saute the first seven ingredients in oil until vegetables are tender.

Remove from the heat; stir in vinegar.

Cool for 5 minutes.

In a bowl, toss rice, chicken, celery, peppers and onions. Stir in the ham mixture.

Cover and chill for at least 2 hours. Garnish with tomatoes.
