Spinach-Orange Toss Recipe - Cooking Index
1 | Mandarin oranges - drained | |
6 cups | 1422ml | Spinach or other greens - torn in bite-size pieces |
1 | Cucumber - thinly sliced (small) | |
1 | Avocado - peeled and sliced | |
2 tablespoons | 30ml | Green onions - sliced |
Dressing | ||
1/2 teaspoon | 2.5ml | Orange peel - grated |
1/4 cup | 59ml | Orange juice |
1/4 cup | 59ml | Oil |
2 tablespoons | 30ml | Sugar |
2 tablespoons | 30ml | Wine vinegar |
1 tablespoon | 15ml | Lemon juice |
1/4 teaspoon | 1.3ml | Salt |
Combine ingredients for dressing in a covered container and shake.
Combine remaining ingredients in a bowl, add dressing, toss lightly. Serves 8.
