Spicy Noodle Salad

Recipe Ingredients

12 oz 340gSpaghetti
2 tablespoons 30mlSesame oil
1 1/2 cups 165g / 5.8ozCarrots - grated
1 1/2 cups 240g / 8.5ozBean sprouts
4   Green onions - chopped
1 tablespoon 15mlOrange rind - grated
1/4 cup 59mlOrange juice
1/4 cup 59mlTahini (optl)
3 tablespoons 45mlSoy sauce
1 teaspoon 5mlGranulated sugar
1 teaspoon 5mlHot pepper sauce
1/2 cup 73g / 2.6ozPeanuts - chopped
1/4 cup 36g / 1.3ozFresh coriander - chopped

Recipe Instructions

In large pot of boiling salted water, cook spaghetti for 8-10 minutes or until tender but firm; drain and rinse under cold water.

Drain well and transfer to bowl; toss with sesame oil.

Add carrots, bean sprouts, onions and orange rind.

Combine orange juice, tahini, soy sauce, sugar and hot pepper sauce; toss with spaghetti mixture.

Sprinkle with peanuts and coriander.
