Snow Pea And Mango Salad With Hazelnuts Recipe - Cooking Index
1 lb | 454g / 16oz | Snow peas - or sugar snap peas |
2 | Mangoes - peeled and thinly | |
1/2 cup | 73g / 2.6oz | Red pepper - finely diced |
Dressing | ||
3 tablespoons | 45ml | Lemon juice - fresh |
1/2 teaspoon | 2.5ml | Salt |
1/4 teaspoon | 1.3ml | Pepper |
3 tablespoons | 45ml | Hazelnut oil |
3 tablespoons | 45ml | Vegetable oil |
3/4 cup | 109g / 3.8oz | Hazelnuts; chopped - toasted |
In large pot of boiling water, blanch peas for 1 minute; or until color is set.
Immediately drain and refresh under cold running water.
When cool, combine in bowl with mangoes and red pepper
To make dressing: In a small bowl, whisk together lemon juice, salt and pepper.
Whisking constantly, add oils. blend in nuts and pour over snow pea mixture.
Toss gently to coat.
