Saute Of Summer Salad

Recipe Ingredients

2 tablespoons 30mlOlive oil
1/4 cup 15g / 0.5ozFinely diced red onion
2   Kirby cucumbers - peeled and seeded cut into 1/2-inch half moons
1   Radishes - trimmed, thinly
  Sliced
2   Tomatoes - seeded, cut in 1/2"
  Dice
2 cups 474mlRomaine lettuce* - cut into strips
2 teaspoons 10mlTarragon or white wine vinegar
  Salt and freshly ground black pepper

Recipe Instructions

* or washed escarole lettuce

Heat the olive oil. When hot add the onions and cook for 2 to 3 minutes or until tender.

Add the cucumbers and radishes and saute for about a minute or just until hot.

Add the tomatoes and lettuce and saute just until lettuce wilts.

Remove from heat, add vinegar and season to taste with salt and pepper.
