Quinoa Tabouli Salad

Recipe Ingredients

2 cups 474mlEden quinoa - rinsed
3/4 cup 109g / 3.8ozFresh parsley - chopped
3/4 cup 46g / 1.6ozRipe tomatoes - diced
1   Cucumber - peeled, seeded, diced
1   Green onions - chopped
5 sections  Fresh mint - chopped
4 tablespoons 60mlEden extra virgin olive oil
2 tablespoons 30mlEden ume plum vinegar
2   Garlic cloves - peeled, pressed

Recipe Instructions

Cook Quinoa according to package directions. Cool.

Combine Quinoa, parsley, tomatoes, cucumbers, garlic, green onions, and mint. Mix well.

Combine olive oil, ume plum vinegar and garlic and mix into salad.

Prep Time: 30-45 min. Cooking Time: 25 min.
