Quinoa Tabouli Salad Recipe - Cooking Index
2 cups | 474ml | Eden quinoa - rinsed |
3/4 cup | 109g / 3.8oz | Fresh parsley - chopped |
3/4 cup | 46g / 1.6oz | Ripe tomatoes - diced |
1 | Cucumber - peeled, seeded, diced | |
1 | Green onions - chopped | |
5 sections | Fresh mint - chopped | |
4 tablespoons | 60ml | Eden extra virgin olive oil |
2 tablespoons | 30ml | Eden ume plum vinegar |
2 | Garlic cloves - peeled, pressed |
Cook Quinoa according to package directions. Cool.
Combine Quinoa, parsley, tomatoes, cucumbers, garlic, green onions, and mint. Mix well.
Combine olive oil, ume plum vinegar and garlic and mix into salad.
Prep Time: 30-45 min. Cooking Time: 25 min.
