2 cups | 474ml | Cooked am quinoa |
1 cup | 146g / 5.1oz | Parsley - chopped |
1/2 cup | 31g / 1.1oz | Chopped green onion |
1 | Garlic clove - pressed | |
1/2 teaspoon | 2.5ml | Basil |
1/2 cup | 118ml | Lemon juice |
1/4 cup | 59ml | Am unrefined olive oil |
1/8 teaspoon | 0.6ml | Sea salt - (optional) |
1/8 teaspoon | 0.6ml | Pepper - (optional) |
1 | Lettuce leaves |
Mix first 9 ingredients and place in a salad bowl lined with washed lettuce leaves.
Refrigerate for at least two hours to let flavor blend.
Fresh mint and black olives make nice garnishes for this dish.
