Potato Salad - B H and G Recipe - Cooking Index

| 2 | Celery - thinly sliced | |
| 1 | Green pepper - chopped (medium) | |
| 1/3 cup | 20g / 0.7oz | Onion | 
| 1 1/4 cups | 296ml | Mayonnaise or salad dressing | 
| 1 tablespoon | 15ml | Vinegar | 
| 2 teaspoons | 10ml | Dijon-style mustard or prepared mustard | 
| 1 teaspoon | 5ml | Salt | 
| 1/2 teaspoon | 2.5ml | Pepper | 
| 6 | Hard-cooked eggs - coarsely chopped | 
In a covered saucepan cook potatoes in boiling water for 20-25 minutes or till just tender; drain well. Peel and cube potatoes.
In a very large bowl combine celery, green pepper, onion, mayonnaise or salad dressing, vinegar, mustard, salt and pepper. Add potatoes and eggs. Toss lightly to mix.
Cover and chill for 6-24 hours.
