2 | Unflavored gelatin | |
1/3 cup | 78ml | Lemon juice |
2 3/4 cups | 651ml | Water |
1/2 cup | 99g / 3.5oz | Sugar |
1/4 cup | 59ml | Cider vinegar |
1/2 teaspoon | 2.5ml | Salt |
2 cups | 474ml | Finely shredded cabbage |
1 cup | 110g / 3.9oz | Chopped celery |
1/2 cup | 73g / 2.6oz | Chopped green pepper |
1 | Sliced pimientos (1 jar) |
Drain and chop the jar of pimientos.
In medium saucepan, soften gelatin in lemon juice; t stand 1 minute.
Over low heat, cook until gelatin dissolves. Add water, sugar, vinegar and salt; stir until sugar dissolves.
Chill until partially set.
Fold in remaining ingredients; pour into lightly oiled 6-cup mold.
Chill until set, about 3 hours or overnight.
Refrigerate leftovers.
