Pasta Green Salad

Recipe Ingredients

  For The Salad
3 cups 711mlRotini - cooked and cooled
2 cups 292g / 10ozSwiss cheese - shredded
1   Frozen cut green beans - drained
1   Frozen green peas - drained
1 cup 237mlGreen pepper strips cut in
1/2 cup 118mlScallions - sliced
1 cup 146g / 5.1ozCucumber - chopped
  For The Dressing
1/3 cup 78mlMayonnaise
1/3 cup 78mlPlain yogurt
3 tablespoons 45mlParmesan cheese - grated
1 tablespoon 15mlLemon juice
1 1/2 teaspoons 7.5mlDried dill
1 teaspoon 5mlSugar
1/4 teaspoon 1.3mlSalt
1/4 teaspoon 1.3mlPepper

Recipe Instructions

In a small bowl, combine all the dressing ingredients. Mix until well-blended; set aside. If not serving immediately, cover and chill until ready to use.

Place the cooled rotini in a large bowl and toss with the remaining ingredients, except the dressing. Cover and chill until ready to use. Just before serving, mix the dressing again and toss into the salad.
