Pasta Green Salad Recipe - Cooking Index
For The Salad | ||
3 cups | 711ml | Rotini - cooked and cooled |
2 cups | 292g / 10oz | Swiss cheese - shredded |
1 | Frozen cut green beans - drained | |
1 | Frozen green peas - drained | |
1 cup | 237ml | Green pepper strips cut in |
1/2 cup | 118ml | Scallions - sliced |
1 cup | 146g / 5.1oz | Cucumber - chopped |
For The Dressing | ||
1/3 cup | 78ml | Mayonnaise |
1/3 cup | 78ml | Plain yogurt |
3 tablespoons | 45ml | Parmesan cheese - grated |
1 tablespoon | 15ml | Lemon juice |
1 1/2 teaspoons | 7.5ml | Dried dill |
1 teaspoon | 5ml | Sugar |
1/4 teaspoon | 1.3ml | Salt |
1/4 teaspoon | 1.3ml | Pepper |
In a small bowl, combine all the dressing ingredients. Mix until well-blended; set aside. If not serving immediately, cover and chill until ready to use.
Place the cooled rotini in a large bowl and toss with the remaining ingredients, except the dressing. Cover and chill until ready to use. Just before serving, mix the dressing again and toss into the salad.
