Oriental Cabbage Slaw

Recipe Ingredients

1 teaspoon 5mlCucumber - halved lengthwise, (medium) thinly, sliced
1 cup 237mlFresh pea pods - halved
1/4 cup 59mlRice vinegar
1 tablespoon 15mlSalad oil
2 teaspoons 10mlToasted sesame oil
1/2 teaspoon 2.5mlSugar
1/8 teaspoon 0.6mlSalt
1/2 teaspoon 2.5mlRed chili paste - (optional)
4 cups 948mlNapa cabbage - shredded
1/2 cup 73g / 2.6ozHoney-roasted peanuts - coarsely chopped

Recipe Instructions

In a large mixing bowl combine cucumber and pea pods.

For dressing, in a small mixing bowl stir together vinegar, salad oil, sesame oil, sugar, salt and red chili paste, if desired

Pour over cucumber and pea pods, stirring to coat.

Cover and chill for 4 to 24 hours. Just before serving, stir in cabbage and peanuts
