2 lbs 908g / 32ozRaw beetroot
1   Red onion - finely chopped
2   Garlic cloves - finely chopped
4   Ripe tomatoes
1 tablespoon 15mlCilantro fresh - chopped
1 tablespoon 15mlFresh parsley - chopped
  Black olives for garnish
  Dressing
2 tablespoons 30mlBalsamic vinegar
1/2 cup 118mlOlive oil
1/2 teaspoon 2.5mlHarissa*
  Salt and freshly ground pepper

Recipe Instructions

Combine salad ingredients.

Combine dressing ingredients and shake well.
