3 | Eggs - boiled (large) | |
2 | Green onions - thinly sliced | |
2 | Celery - chopped | |
2 | Sour or dill pickles - chopped (large) | |
1 | Pimentos - chopped | |
Salt and pepper to taste | ||
Cajun seasoning | ||

Paprika, optional | ||
1 cup | 237ml | Mayonnaise or more |
2 tablespoons | 30ml | White vinegar |
3 tablespoons | 45ml | Yellow mustard |
Boil the potatoes and can put in eggs at the same time in same water to save time.
After they have boiled till soft but still firm, cool in cold water and start chopping vegetables.
Let the potatoes sit in cool water to cool them down. Peel and add to chopped vegetables.
Peel and chop the potatoes and add to the chopped vegetables.
Add the mayonnaise and the mustard and sprinkle vinegar over it all.
Toss to mix and add salt and pepper. Sprinkle with paprika and or Cajun seasoning and put in the refrigerator to chill well.
Serve and listen to people rave over it!
