Marion's Macaroni Salad Recipe - Cooking Index
1 | Salad macaroni - cooked | |
6 | Hard-boiled eggs - finely chopped | |
1 | Olives - chopped | |
1 | Pimientos - finely chopped | |
5 | Sweet pickles - finely chopped | |
3 tablespoons | 45ml | Fresh parsley - minced |
4 tablespoons | 60ml | Tender celery - finely chopped |
1 tablespoon | 15ml | Onion - finely chopped (medium) |
3 tablespoons | 45ml | Bell pepper - minced (opt.) |
Dressing | ||
2 cups | 474ml | Mayonnaise |
1 1/2 teaspoons | 7.5ml | Salt |
1/8 teaspoon | 0.6ml | Pepper |
1/2 teaspoon | 2.5ml | Paprika |
1 teaspoon | 5ml | Prepared mustard |
Cook the macaroni last, after all the other ingredients have been minced.
Rinse, drain, and immediately combine with other ingredients. Mix thoroughly, chill. (May require more mayonnaise.)
Best when made a day ahead of serving.
