Mandarin Orange-Almond Salad Recipe - Cooking Index

1/2 | Romaine lettuce | |
2 | Mandarin oranges - drained | |
2 cups | 220g / 7.8oz | Celery - sliced |
2 tablespoons | 30ml | Parsley - minced |
4 | Green onions sliced | |
1 cup | 93g / 3.3oz | Almonds - sliced |
4 tablespoons | 60ml | Sugar |
Dressing | ||
1 teaspoon | 5ml | Salt |
1/4 cup | 49g / 1.7oz | Sugar |
1 | Tabasco | |
1 | Lemon pepper | |
1/4 cup | 59ml | Cider vinegar |
1/2 cup | 118ml | Canola oil |
Wash and tear lettuce into bite size pieces.
Combine oranges, celery, parsley and green onion.
Chill well. Put sugar into heavy skillet, add almonds and stir constantly over low heat until caramelized.
Turn out onto foil - cool and break into small pieces.
Dressing: Combine all ingredients and toss with salad just before serving.
