Mache and Beet Salad Recipe - Cooking Index
2 cups | 474ml | Mache (a pasta) |
4 | White or golden beets - cooked, peeled & c | |
1 teaspoon | 5ml | Chopped lovage or parsley |
2 tablespoons | 30ml | Balsamic vinegar |
5 tablespoons | 75ml | Olive oil |
2 | Eggs - hard-boiled | |
1/2 cup | 15g / 0.5oz | Home made croutons |
In a salad bowl combine lovage or parsley, vinegar and oil.
Add beets, toss to coat and marinate for 1 hour.
Add mache, toss, garnish with eggs and croutons.
