Macaroni Salad - 5

Recipe Ingredients

2 cups 474mlUncooked macaroni
1 cup 110g / 3.9ozCarrots - diced
2 cups 292g / 10ozBroccoli florets
1 cup 237mlBell pepper (medium)
1/2 cup 31g / 1.1ozCorn
2 tablespoons 30mlOil
1 teaspoon 5mlRed wine vinegar
2 teaspoons 10mlGarlic powder
1 teaspoon 5mlDried oregano
2 teaspoons 10mlFresh minced basil
1/2 teaspoon 2.5mlOnion powder
1/8 teaspoon 0.6mlCayenne
  Salt to taste
  Black peppercorns - ground to taste

Recipe Instructions

Make the macaroni by following the directions on the package, drain and let cool.

Steam or boil carrots and broccoli to softened them. (Although you can make this salad with raw vegetables if you desire).

Place all the veggies in a bowl, add spices and vinegar, mix. Add macaroni to the vegetables and gently mix.

Prep time: 15 minutes

Cook time: 5-10 minutes
