Macaroni Salad - 5 Recipe - Cooking Index
2 cups | 474ml | Uncooked macaroni |
1 cup | 110g / 3.9oz | Carrots - diced |
2 cups | 292g / 10oz | Broccoli florets |
1 cup | 237ml | Bell pepper (medium) |
1/2 cup | 31g / 1.1oz | Corn |
2 tablespoons | 30ml | Oil |
1 teaspoon | 5ml | Red wine vinegar |
2 teaspoons | 10ml | Garlic powder |
1 teaspoon | 5ml | Dried oregano |
2 teaspoons | 10ml | Fresh minced basil |
1/2 teaspoon | 2.5ml | Onion powder |
1/8 teaspoon | 0.6ml | Cayenne |
Salt to taste | ||
Black peppercorns - ground to taste |
Make the macaroni by following the directions on the package, drain and let cool.
Steam or boil carrots and broccoli to softened them. (Although you can make this salad with raw vegetables if you desire).
Place all the veggies in a bowl, add spices and vinegar, mix. Add macaroni to the vegetables and gently mix.
Prep time: 15 minutes
Cook time: 5-10 minutes
