Luncheon Salad

Recipe Ingredients

3 oz 85gLemon gelatin
1 cup 237mlBoiling water
1/2 teaspoon 2.5mlSalt
1 tablespoon 15mlOnion - grated
  Hard boiled eggs - diced
1/2 lb 227g / 8ozPimiento cheese - diced
1 teaspoon 5mlGreen pepper
3 cups 330g / 11ozCelery - chopped fine
1 cup 237mlWalnuts
1/2 cup 118mlMayonnaise
1 cup 237mlWhipped topping

Recipe Instructions

Dissolve gelatin in boiling water. Cool.

Add remaining ingredients except for the mayonnaise and whipped topping.

Mix the mayonnaise and topping and blend into the gelatin mixture.

Pour into individual molds or a ring mold. Refrigerate for a least 2 hours before serving.

Note: this recipe make a luncheon meal by itself.
