Hot Shoestring Potato Salad Recipe - Cooking Index
1 lb | 454g / 16oz | Russet potato |
1/2 cup | 118ml | Red bell pepper |
1/4 cup | 15g / 0.5oz | Green onion |
1 tablespoon | 15ml | Rice wine vinegar |
2 teaspoons | 10ml | Hoisin sauce |
1 teaspoon | 5ml | Sesame seeds |
Soak potatoes in cold water 15 min; drain and pat dry with paper towels.
Arrange potatoes in a single layer in a large shallow pan coated with cooking spray.
Bake at 450F for 30 min. Stirring every 10 minutes.
Combine potatoes, bell pepper and green onions in a medium bowl.
Combine vinegar and hoisin sauce in a small bowl.
Pour over potato mixture, tossing gently.
Sprinkle with sesame seeds and serve immediately. )
