Green And Red Tomato Salad

Recipe Ingredients

3 cups 187g / 6.6ozGreen tomatoes* (large)
3 cups 187g / 6.6ozRed-ripe tomatoes (large)
1 cup 62g / 2.2ozRed onion (medium)
3 tablespoons 45mlFresh basil - coarsely chopped
  Dressing
1   Garlic - finely chopped
1/2 teaspoon 2.5mlSalt
1/8 teaspoon 0.6mlFreshly ground pepper
2 tablespoons 30mlLemon juice
3 tablespoons 45mlWine vinegar
1/2 cup 118mlOlive oil
1/2 teaspoon 2.5mlGround cumin

Recipe Instructions

*Pick the green tomatoes just before they begin to ripen red.

Cube green and red tomatoes. Cut onion into thin slices and separate into rings.

Combine tomatoes and onions in a salad bowl with the chopped basil.

Combine the dressing ingredients, mixing well.

Add dressing to salad and toss. Let set about 30 minutes to blend flavors.

Delicious with BBQ!
