3 cups | 187g / 6.6oz | Green tomatoes* (large) |
3 cups | 187g / 6.6oz | Red-ripe tomatoes (large) |
1 cup | 62g / 2.2oz | Red onion (medium) |
3 tablespoons | 45ml | Fresh basil - coarsely chopped |
Dressing | ||
1 | Garlic - finely chopped | |
1/2 teaspoon | 2.5ml | Salt |
1/8 teaspoon | 0.6ml | Freshly ground pepper |
2 tablespoons | 30ml | Lemon juice |
3 tablespoons | 45ml | Wine vinegar |
1/2 cup | 118ml | Olive oil |
1/2 teaspoon | 2.5ml | Ground cumin |
*Pick the green tomatoes just before they begin to ripen red.
Cube green and red tomatoes. Cut onion into thin slices and separate into rings.
Combine tomatoes and onions in a salad bowl with the chopped basil.
Combine the dressing ingredients, mixing well.
Add dressing to salad and toss. Let set about 30 minutes to blend flavors.
Delicious with BBQ!
