3 | Water | |
1/4 cup | 49g / 1.7oz | Margarine or butter |
1 1/2 cups | 355ml | Cooking oil |
1 cup | 237ml | Lemon juice |
3 cups | 187g / 6.6oz | Tomatoes - fresh, diced |
1 1/2 cups | 219g / 7.7oz | Green pepper - diced |
1 1/2 cups | 219g / 7.7oz | Cucumber - pared and diced |
1 cup | 237ml | Parsley - fresh, finely |
1. Cook rice in water with margarine or butter according to package instructions, for 20 minutes.
2. Transfer rice and remaining liquid to shallow pan, cover and chill.
3. Fold in remaining ingredients.
4. Chill before serving.
