Garbanzo and Carrot Salad Recipe - Cooking Index
1 | Ca Eden garbanzo beans - drained | |
1 | Carrot - cut in matchsticks (medium) | |
1/4 cup | 4g / 0.1oz | Fresh cilantro or parsley - finely chopped |
2 tablespoons | 30ml | Sesame seeds - lightly toasted |
1 | Garlic - pressed | |
2 | Green onions - finely chopped | |
2 tablespoons | 30ml | Sesame tahini - (mixed with |
1 tablespoon | 15ml | -- water) |
1 teaspoon | 5ml | Eden ume plum vinegar |
Mix beans, carrot, cilantro, sesame seeds, garlic and green onions.
Mix vinegar with tahini mixture and pour over salad.
Serve on a bed of crisp lettuce.
