3 cups | 711ml | Quinoa - cooked |
1 | Apricot halves - drained and chopped | |
1 | Naval orange - sectioned | |
1 cup | 237ml | Seedless red grapes - halved |
1/4 cup | 59ml | Scallions - sliced |
1/4 cup | 36g / 1.3oz | Fresh parsley - chopped |
1/4 teaspoon | 1.3ml | Black pepper |
Salt |
In a medium bowl, toss quinoa, apricots, oranges, grapes, scallions, parsley and black pepper.
Season to taste with salt, if desired.
