Freezer Coleslaw Recipe - Cooking Index
3 lbs | 1362g / 48oz | Cabbage head - shredded |
1/2 | Green pepper - chopped | |
1/2 cup | 55g / 1.9oz | Carrot - shredded |
1 cup | 62g / 2.2oz | Onion - chopped (small) |
1 teaspoon | 5ml | Salt |
Dressing | ||
1 cup | 198g / 7oz | Sugar |
1 cup | 237ml | Vinegar |
1/4 cup | 59ml | Water |
1 teaspoon | 5ml | Salt |
1/2 teaspoon | 2.5ml | Celery seed |
1/2 teaspoon | 2.5ml | Mustard seed |
In a large bowl, combine the first five ingredients. Let stand 1 hour. Drain.
Bring all dressing ingredients to a boil; simmer 2-3 minutes. Cool.
Pour over cabbage. Pack in freezer containers; freeze.
Yield: about 4 pints.
