Dijon Shredded Carrot Salad Recipe - Cooking Index
2 tablespoons | 30ml | Lemon juice |
1 teaspoon | 5ml | Dijon mustard |
1 tablespoon | 15ml | Extra virgin olive oil |
2 | Garlic cloves - minced | |
1 1/2 tablespoons | 22ml | Parsley |
6 tablespoons | 90ml | Carrots* - grated (small) |
1 | Arugula - torn into bite-size |
* the sweetest you can find!
Whisk together lemon juice, mustard and olive oil. Blend in garlic and parsley.
Pour dressing over grated carrots and toss to coat well.
Serve over arugula.
