Cucumber Salad (Young)

Recipe Ingredients

2   Cucumbers - peeled, halved &
  Seeded
1   Lime - juice of
1 1/2 teaspoons 7.5mlSugar
1/4 cup 59mlSoy sauce
1/2 cup 31g / 1.1ozRed onion - thinly sliced (small)
1 cup 237mlFresh red chili pepper - thinly sliced (small)
1 cup 237mlFresh green chili pepper - thinly sliced (small)
2   Plum tomatoes - sliced
1   Chili peppers
  Cilantro sprigs

Recipe Instructions

Cut cucumber halves into 2" long sections. Cut each section into 1/4" thick strips.

Place in a bowl. Add the lime juice, sugar and soy sauce. Toss gently until well combined.

Add onions, chiles and tomatoes and toss gently until well combined.

Garnish with the whole chilies and cilantro sprigs.
