Chicken Broccoli Salad Recipe - Cooking Index
1/3 cup | 78ml | Bulgur wheat |
1 cup | 160g / 5.6oz | Brown rice |
2 2/3 cups | 631ml | Boiling water |
1 teaspoon | 5ml | Chicken bouillon |

1 | Chicken breast | |
1/2 cup | 73g / 2.6oz | Broccoli flowerettes |
2 tablespoons | 30ml | Green onion |
1 teaspoon | 5ml | Lime juice |
1/4 teaspoon | 1.3ml | Pepper |
1/4 teaspoon | 1.3ml | Red pepper flakes - crushed |
1 teaspoon | 5ml | Fresh gingerroot |
Combine bulgur and 2/3 cup of boiling water in a large bowl; let stand 30 to 45 minutes or until liquid is absorbed. Set aside.
Combine bouillon granules, garlic, and remaining 2 cups boiling water in a medium saucepan. Bring to a boil over high heat. Add chicken. Cover, reduce heat and simmer 20 minutes or until chicken is tender.
Remove chicken and let cool. Discard broth. Bone chicken and cut into bite side pieces. Combine with reserved bulgur
Steam broccoli 5 minutes or until crisp tender.
Add to chicken mixture.
Add green onions, lime juice pepper, red pepper flakes and gingerroot to chicken mixture, tossing well
Cover and chill 2 to 3 hours.
