1/4 cup | 59ml | Vinegar |
1 tablespoon | 15ml | Sugar |
1 1/2 teaspoons | 7.5ml | Chili powder |
1 teaspoon | 5ml | Salt - optional |
Salad | ||
4 | Red potatoes (about 2, pounds) - peeled and (large) | |
1 1/2 cups | 93g / 3.3oz | Cooked whole kernel corn |
1 cup | 110g / 3.9oz | Carrot - shredded |
1/2 cup | 31g / 1.1oz | Red onion - chopped |
1/2 cup | 73g / 2.6oz | Green pepper - diced |
1/2 cup | 73g / 2.6oz | Sweet red pepper - diced |
1/2 cup | 118ml | Pitted ripe olives - sliced |
This tasty dish uses less sugar, salt and fat.
In a small bowl or jar, combine all dressing ingredients; cover and chill.
Cube potatoes; combine with corn, carrot, onion, peppers and olives in a salad bowl.
Pour dressing over; toss lightly. Cover and chill.
