Cafe San Pasqual Beef Marinade (Fajitas) Recipe - Cooking Index
1 lb | 454g / 16oz | Onions |
4 | Garlic | |
2 | Bay leaves | |
2 tablespoons | 30ml | White wine vinegar |
1 teaspoon | 5ml | Mexican oregano |
1/2 teaspoon | 2.5ml | Black pepper |
1 lb | 454g / 16oz | Tomatoes, ripe |
3 | Jalapenos | |
1/2 cup | 118ml | Lime juice |
2 teaspoons | 10ml | Thyme |
2 teaspoons | 10ml | Cumin |
1 teaspoon | 5ml | Salt |
2 lbs | 908g / 32oz | Beef, tri-tip or London broil |
Place all ingredients in the jar of a blender and puree until uniform. You may need to add some water or Mexican beer to give enough liquid. Do not make the marinade too thin however.
Cut the beef tri-tip or London broil into thin strips.
Place the meat into a glass bowl and cover with the marinade. Mix the marinade well into the meat.
Let the meat marinate overnight in the refrigerator.
The next day, prepare the grill and grill the marinated meat strips over direct heat for about 2 minutes per side.
