4 oz | 113g | Chicken breast halves without skin - chopped |
1/2 cup | 73g / 2.6oz | Red bell pepper - chopped |
1/2 cup | 73g / 2.6oz | Cucumber - pared and chopped |
1/2 cup | 73g / 2.6oz | Scallion - chopped |
2 | Pita bread - 1 oz each |
In a medium bowl, combine mayo, blanched tomatoes and vinegar. Add
chicken, bell pepper and cukes and scallion. Mix well...Fill pitas
equally. Place pitas in a glass baking dish; cover with paper towels.
Microwave on high 1 minute; turning once.
Cut pitas in half to make 4 sandwiches. Additional mixture may be served
along side the pita.
