WW Chunky Chicken Pitas (4 PTS ea)

Recipe Ingredients

1   Mayonnaise, imitation, no cholesterol
1   Mayonnaise, imitation, no cholesterol
4   Sun-dried tomatoes - not oil packed, chop
1   Balsamic vinegar
4 oz 113gChicken breast halves without skin - chopped
1/2 cup 73g / 2.6ozRed bell pepper - chopped
1/2 cup 73g / 2.6ozCucumber - pared and chopped
1/2 cup 73g / 2.6ozScallion - chopped
2   Pita bread - 1 oz each

Recipe Instructions

In a medium bowl, combine mayo, blanched tomatoes and vinegar. Add

chicken, bell pepper and cukes and scallion. Mix well...Fill pitas

equally. Place pitas in a glass baking dish; cover with paper towels.

Microwave on high 1 minute; turning once.

Cut pitas in half to make 4 sandwiches. Additional mixture may be served

along side the pita.
