1) Wash and clean all veggies very well!, when clean run gr onions and leeks
thru food processer.
2) Combine spinach and gr onions and leeks together in sink, you may have to
put half aside there will be alot!salt well, but not to much since feta is
salty! and mix it around let it sit for at least 30 min or if you are
pressed for time put in container in fridge over night!
3) next we take the veggies and in other sink squeeze as much of liquid out
as we can, this part is not easy and time consuming but if done right you
will have crispy pita and if not they may turn out soggy! First time around
i suggest leaving in fridge over night it does most of the work for ya!
4) When squeezing is done take veggies and put in bowl combine half of feta
and 1/2 cup oil, You can use less..but with my husband being greek much more
less then this he complains of not tasting the oil!
5)take 2 sheets of fillo spray in between with butter flavored spray. lay a
good sized amount of veggie mix in like a log roll .roll the 2 sides over
and then start rolling , you will almost have a huge boritto shaped pita!
Then wrap in tin foil and freeze laying flat in freezer or to cook
right away 350 - 450 45 min to a hour. Mine is a gas stove and takes a bit
longer ..i like to cook low and for longer to make sure it cooks good
inside!
This makes 11-13 pitas at 3 poinits each serving , 1/4 of pita!
All ingrediants vary points wise a great deal more than i thought they
would , we buy our stuff from a greek store an dbuy thesame brand so i dont
have to refigure points! you can half this recipe or even 1/4 it but i like
to keep a bunch in freezer, when i have unexpected company for supper i can
pull out and pop in! Hope you enjoy!
