1/3 cup | 78ml | Shallot - thinly sliced |
1 oz | 28g | Extra lean ham - sliced and cut into 1/4" strips |

Cut salmon fillet into 4 equal pieces. Sprinkle cracked pepper, salt, paprika,
and ground red pepper evenly over salmon pieces, and set aside.
Coat a large nonstick skillet with cooking spray; place over medium-high heat until
hot. Add shallots and ham; saute 2 minutes or until shallots are tender. Add salmon
fillets to skillet; cook 4 minutes. Turn fillets, and cook 2 minutes; add broth and
brown sugar. Bring to boil; cook 4 minutes or until fish flakes easily when tested with
a fork. Transfer fillets to individual serving plates. Spoon ham mixture evenly
over fillets.
