Seasoned Alaskan Salmon (5 PTS)

Serves: 4 people

Recipe Ingredients

1 lb 454g / 16ozSalmon fillet
1/4 teaspoon 1.3mlBlack pepper
1   Salt
1   Paprika
1   Red pepper flakes
  Vegetable cooking spray
1/3 cup 78mlShallot - thinly sliced
1 oz 28gExtra lean ham - sliced and cut into 1/4" strips
3/4   Chicken broth
1 tablespoon 15mlDark brown sugar

Recipe Instructions

Cut salmon fillet into 4 equal pieces. Sprinkle cracked pepper, salt, paprika,

and ground red pepper evenly over salmon pieces, and set aside.

Coat a large nonstick skillet with cooking spray; place over medium-high heat until

hot. Add shallots and ham; saute 2 minutes or until shallots are tender. Add salmon

fillets to skillet; cook 4 minutes. Turn fillets, and cook 2 minutes; add broth and

brown sugar. Bring to boil; cook 4 minutes or until fish flakes easily when tested with

a fork. Transfer fillets to individual serving plates. Spoon ham mixture evenly

over fillets.
