Preheat oven to 375 degrees. Lay grouper fillets in a large, shallow,
greased baking dish. Add enough water to reach halfway up the
thickness of the fish. Mix together oil, orange juice, and rind; pour
over fish. Sprinkle with nutmeg and pepper. Bake 12 to 15 minutes
(depending on thickness). Do not overcook.
