3 1/2 cups | 829ml | Sliced peaches - well drained |
1 teaspoon | 5ml | Ground cinnamon |
1/4 teaspoon | 1.3ml | Ground nutmeg |
1 cup | 237ml | Evaporated skim milk |
1/2 cup | 99g / 3.5oz | Egg substitute, liquid |
3/4 cup | 148g / 5.2oz | Sugar substitute |
2/3 cup | 73g / 2.6oz | Bisquick® baking mix |
Streusel (below) | ||
1 tablespoon | 15ml | Margarine from soybean oil - firm |
1/4 cup | 27g / 1oz | Bisquick® baking mix |
2 tablespoons | 30ml | Sugar substitute |
1/3 cup | 30g / 1.1oz | Slivered almonds - optional |
6 tablespoons | 90ml | Cool Whip Lite® |
Heat oven to 375F. Grease pie pan 10 x 1/2". Pat peach slices dry; place in
plate. Sprinkle with cinnamon and nutmeg; toss. Spread evenly in plate.
Mix streusel mixture well margarine, Bisquick, sugar substitute, and slivered
almonds if you use, set aside.
Beat remaining ingredients except streusel and evaporated skim milk until
smooth, 15 seconds in blender on high or 1 minute with electric mixer
on high. Pour into plate. Sprinkle with Streusel Mixture.
Bake until knife inserted in center comes out clean, 40-45 minutes. Top each
serving with Cool Whip Lite.
