Halibut-Asparagus Stir-Fry (2 PTS) Recipe - Cooking Index
1 lb | 454g / 16oz | Halibut - swordfish or tuna |
Fillets, cut into 1-inch pieces | ||
1 | Onion - thinly sliced (medium) | |
3 | Garlic - finely chopped | |
1 teaspoon | 5ml | Finely chopped gingerroot |
1 | Frozen asparagus cuts - (10 ounces) thawed | |
And drained | ||
1 | Sliced mushrooms (3 cups) - (8 ounces) | |
1 | Tomato - cut into thin wedges (medium) | |
2 tablespoons | 30ml | Reduced-sodium soy sauce |
1 tablespoon | 15ml | Lemon juice |
1.Spray 10-inch nonstick skillet with cooking spray; heat over medium-high
heat. Add fish, onion, garlic, gingerroot and asparagus; stir-fry 2 to 3
minutes or until fish almost flakes with fork.
2.Carefully stir in remaining ingredients. Cook until heated through and
fish flakes easily with fork. Serve with additional reduced-sodium soy sauce
if desired.
1 Serving: 140 calories (20 calories from fat); 2 g fat (0 g saturated); 50
mg cholesterol; 350 mg sodium; 11 g carbohydrate (3 g dietary fiber); 22 g
protein.
Does fresh asparagus sound good? Use 1 pound, cut into 1-inch pieces, for
the frozen asparagus.
