Chocolate Meringue Pie (5 PTS)

Serves: 8 people

Recipe Ingredients

1 cup 62g / 2.2ozFlour
1/8 teaspoon 0.6mlSalt
3 tablespoons 45mlVeg shortening
3 tablespoons 45mlIce water (plus 1 tsp)
1 teaspoon 5mlLemon juice
  Cooking spray
1   Egg - lightly beaten
1 cup 198g / 7ozSugar
1/4 cup 27g / 1ozCocoa (plus 1 Tbl)
1/4 cup 15g / 0.5ozCornstarch divided
2 cups 474ml1% milk
2 teaspoons 10mlVanilla
4 teaspoons 20mlEgg whites - room temperature (large)
1/4 teaspoon 1.3mlCream of tartar
1/3 cup 65g / 2.3ozSugar

Recipe Instructions

1) Combine flour and salt, cut in shortening with pastry blender until it

resembles coarse meal. Combine ice water and lemon. Add ice water mixture, 1

Tbs at a time to flour. Toss with a fork until dry ingredients are moist.

Gently press dough into 4 inch circle on heavy-duty plactic wrap. Cover with

additional wrap. Roll dough still covered into an 11 inch circle and chill

for 10 mins.

2) Preheat oven to 425º F

3) Remove plastic wrap, fit dough into 9 inch pie dish coated with cooking

spray. pierce bottom and sides with fork. bake for 14 mins or until lightly

brown. Reduce heat to 325º.

4) Place egg in bowl and stir well. Set aside. Combine 1/2 c sugar, cocoa

and 3 Tbs plus 2 tsp cornstarch in mediun saucepan. Gradually add milk,

stirring with whisk. bring mixture to a boil. and cook 1 min stirring

constantly. Gradually stir about 1/4 on hot cocoa mixture into egg and add

to remaining hot cocoa mixture stirring constantly. Cook an additional

minute or until thick and bubbly stirring constantly. REmove from heat and

stir in vanilla. Pour into prepared crust cover surface with plastic.

5) Beat 4 egg whites, remaining cornstarch and cream of tarter at high speed

until foamy. Gradually add 1/3 c sugar, 1 Tbs at a time, beating until stiff

peaks form. Do not over beat.

6) Uncover pie; spread meringue evenly over hot filling, sealing to edge of

pastry. Bake at 325º for 25 mins and let cool 1 hour on a wire rack. Chill

pie 3 hours or until set
