Bourbon Mashed Sweet Potatoes (2.5 PTS)


Recipe Ingredients

2 1/2 lbs 1135g / 40ozPeeled sweet potatoes - cut into large chunk
1 lb 454g / 16ozCarrot, peeled, cut into chunks
2   Shallots - peeled, halved
2 tablespoons 30mlUnsalted butter
1/3 cup 53g / 1.9ozPacked dark brown sugar
3 tablespoons 45mlBourbon or apple juice
1 teaspoon 5mlSalt
1/4 teaspoon 1.3mlGround cinnamon
1/8 teaspoon 0.6mlAllspice

Recipe Instructions

Preheat oven to 425F. In large foil roasting bag, place sweet potatoes, carrots and shallots in even layer; seal bag. Place on baking sheet. Bake 1 hour, until tender when pierced with metal skewer.

Meanwhile, in small saucepan, combine remaining ingredients. Bring to a simmer; cook 3 minutes.

In food processor, combine potato mixture and sugar mixture; process, in 2 batches if necessary, until smooth. Scrape into serving dish. Serve immediately.

Makes 10 servings. Per serving: 131 calories, 2 g protein, 25 g carb, 3 g fat, 4 g fiber, 6 mg cholesterol, 268 mg sodium
