Banana Bran Bread/Muffins (3 PTS)

Recipe Ingredients

1 1/2 cups 93g / 3.3ozFlour
1/2 cup 99g / 3.5ozSugar
2 teaspoons 10mlBaking powder
1/2 teaspoon 2.5mlBaking soda
1/4 teaspoon 1.3mlSalt
1   Egg - large
1 1/2 cups 355mlMashed bananas - 2 to 3
1 1/2 cups 60g / 2.1oz100% BranŽ cereal - not flakes, but twigs
1/4 cup 59mlWater
2 tablespoons 30mlOil
1 teaspoon 5mlVanilla

Recipe Instructions

Heat oven to 350°F. Coat a 9x5x3" pan with no-stick cooking spray. Mix flour, sugar, baking powder, baking soda & salt in large bowl. In a separate medium size bowl, beat egg, then stir in bananas, cereal, water, oil & vanilla.

Add this mixture to the flour mixture, stir until just moistened (batter will be lumpy). Pour into pan & bake 50-60 minutes or until toothpick comes out clean. Cool 10 minutes, then remove from pan & cool completely on a rack. (For easier slicing, wrap & store overnight).
