2 1/2 cups | 365g / 12oz | Fat-free cheddar cheese |
1 | Broccoli - sliced into long thing pieces | |
1 | Cauliflower - sliced into long thing poieces | |
3 | Potatoes - sliced into long thi (medium) | |

2 cups | 474ml | Milk |
3/4 cup | 177ml | Egg Substitute |
1/4 cup | 36g / 1.3oz | Fat-free Parmesan Cheese - grated |
3 cups | 438g / 15oz | Bread crumbs |
Heat oven to 375ºF. Prepare a large deep casserole dish with cooking spray.
Lay one layer of carrot and zucchini, sprinkle with half of the onions and mushrooms, one-third of the grated cheese, and salt and pepper, lay down a layer of broccoli and cauliflower, sprinkle with remaining onions and mushrooms, one-third of the grated cheese and salt and pepper. Lay down a layer of potatoes and sprinkle with salt and pepper.
Mix together milk and egg substitute and pour over mixture. Cover with foil or a lid and bake for 30 minutes. Uncover and bake for 15 minutes. Sprinkle with remaining one-third of the cheese, breadcrumbs and Parmesan mixture and bake another 15 minutes.
