Baked Vegetables Au Gratin (5 PTS)

Recipe Ingredients

1   Onion - chopped (medium)
1 cup 237mlSliced mushrooms
1 cup 110g / 3.9ozCarrot - sliced the length of (large)
1   Zucchini - sliced into long thing pieces
2 1/2 cups 365g / 12ozFat-free cheddar cheese
1   Broccoli - sliced into long thing pieces
1   Cauliflower - sliced into long thing poieces
3   Potatoes - sliced into long thi (medium)
  Salt
  Black pepper
2 cups 474mlMilk
3/4 cup 177mlEgg Substitute
1/4 cup 36g / 1.3ozFat-free Parmesan Cheese - grated
3 cups 438g / 15ozBread crumbs

Recipe Instructions

Heat oven to 375ºF. Prepare a large deep casserole dish with cooking spray.

Lay one layer of carrot and zucchini, sprinkle with half of the onions and mushrooms, one-third of the grated cheese, and salt and pepper, lay down a layer of broccoli and cauliflower, sprinkle with remaining onions and mushrooms, one-third of the grated cheese and salt and pepper. Lay down a layer of potatoes and sprinkle with salt and pepper.

Mix together milk and egg substitute and pour over mixture. Cover with foil or a lid and bake for 30 minutes. Uncover and bake for 15 minutes. Sprinkle with remaining one-third of the cheese, breadcrumbs and Parmesan mixture and bake another 15 minutes.
